I started this blog to keep track of my kitchen creations. I love cooking and eating. In 2008 I was diagnosed with RA. Food started becoming a huge problem. I needed to find a better way to eat the flavors I love. All the recipes I create are driven by my desire to eat good food that won't create extra pain and inflammation in my internal ecosystem. While the recipes are wholesome, the language is not. I swear. I use the word 'fuck'. A lot! I make no apologies for that. It's just a fair warning. I'm raw and real. Happy cooking! Swamp Cubes

My juicer has not been performing as it should when it comes to juicing leafy greens.  I was beginning to feel like I was wasting more than I was juicing.  I decided to use a different tactic to get the most out of my leaves!

1 large bunch of parsley
1 large bunch of cilantro
1 large handful of spinach
water

Roughly chop the spinach, parsley, and cilantro and put all of it in the blender.

Start the blender and add water a little at a time to keep everything mixing.

Blend until liquified, adding water in small amounts (1/8 cup at a time) as necessary.

Pour juice into ice cube trays and freeze solid.  Once frozen, pop them out and put them into freezer bags.

If you are making Swamp Water use 2-4 Swamp Cubes in place of juicing any greens.

Swamp Water

I have green juices every day. I usually am drinking them at work too. One of my good friends and fellow teacher, Amy, gets quite grossed out by them. She says it looks like something that was dredged from the bottom of a pond. I do love that girl!

PUT IN THE JUICER:
2 apples
5 stalks of celery
1/2 a lime (including zest)
1" slab of pineapple
1 cucumber, unpeeled
1 large handful of parsley
1 large handful of cilantro
1 large handful of spinach
*you can also choose to make a batch of swamp cubes rather than juice the parsley, cilantro, and spinach 
5-6 romaine leaves
5-6 kale leaves 
1/2 bulb of fennel

PUT IN THE BLENDER:
The juice you just made
1 banana
1/2 of a Haas avocado
2 oz of wheatgrass juice, fresh or frozen
2 teaspoons of Sun Is Shining
Chlorella
Blend quickly

*If you are using Swamp Cubes, put 4 of those in the blender instead of juicing the cilantro, parsley, and spinach.

If it seems too thick for you, gently blend in some water.

Store in glass mason jars. It will fit in a quart jar or 2 pint jars.
This makes enough for 2 1-pint servings.

SHAWN'S SAVIOR Smoothie

This smoothie recipe was shared by my friend Shawn who is a stay-at-home-dad.  With 2 little ones and a couple of dogs in the mix he needs all the energy he can get!  Thanks Shawn!

1 orange, zest removed
1 handful of grapes
1small apple cored but unpeeled
3-5 small carrots chopped
1handful of spinach
4 or 5 strawberries
3 peach slices (or use the whole thing if you like)
1handful blueberries
2 handfuls of ice
a little water

If you have a Vitamix or similar, you can put everything in at once, in the order listed.

GREEN MEENIE Fresh Juice

Talk about a burst of green goodness!  I should have named this GREEN GODDESS!  This juice packs one hell of a chlorophyll punch!  The apple, pear, and lemon combo helps cleanse as well as cut away the bitterness of the greens.  The addition of wild dandelion greens is a great treat or your body during those few weeks in the spring when they start appearing in your front yard.  I don't spray my yard so I know that mine are safe to consume.  Check your local public markets for them too.  Try to avoid the "tame" ones in the supermarkets.  They lose a lot of their natural flavor and nutrients when they are grown deliberately.

1 granny smith apple
1 green pear
1/2 of a lemon, including rind
1 whole unpeeled cucumber
3 stalks of celery
2 stalks of fennel
2 big handfuls of spinach
5 kale leaves
1 small handful of parsely
1 small handful of cilantro
5 green swiss chard leaves
5 romaine lettuce leaves
3-5 good sized fresh, wild dandelion plants, roots too (when in season)
2 frozen wheat grass cubes

Juice the leafy veg first and then everything else except the wheatgrass cubes.  This usually makes enought to fill up 2 pint-sized canning jars or 1 quart jar.  Put one wheatgrass cube in each pint jar or if you are using a quart jar, put them both in there.  Pour the juice over the ice cubes.  Drink immediately or save for later.  If you save it for later, make sure to cap the jar and refrigrate and don't wait too long to drink it!!

APPLE BROWN BETTY Smoothie**Green Monster**

1 cup of almond or hemp milk
2 cored apples with the skin on
1/2 an avacado
1 banana
1/4 cup walnuts
2 tablespoons of chia seeds
1 big handful of fresh baby spinach
2-4 tablespoons of raw honey or agave nectar
ice
Blend all ingredients well. Add ice cubes one at a time.

CRAZY CRANBERRY COCKTAIL Smoothie **Green Monster**

I made this smoothie this morning. So yummy! And I don't like cranberries!

Crazy Cranberry Cocktail

1 cup of almond milk or hemp milk
1/2 an avacado
1 handful of fresh spinach
1 banana
1 cup of cranberries

put them all in the blender and blend away!

GREEN GODDESS Smoothie **Green Monster**

1 cup hemp milk or almond milk
1 banana
6 medjool dates pitted and chopped
1/2 of an avacado
3 large kale leaves
1 small handful of baby spinach
2 cubes of frozen wheatgrass juice
1 tablespoon of spirulina powder

Get the milk going and quickly add things, as this has a tendency to get thick fast. You can always thin it with water. It's pretty stong but the dates will sweeten it.
